Honey Basil Collins

HONEY BASIL COLLINS

  • 2 oz. / 60 ml. gin or vodka

  • ¾ oz. / 22.5 ml. fresh lemon juice

  • ¾ oz. / 22.5 ml. honey syrup

  • 4–6 large basil leaves

  • 2–3 oz. / 60–90 ml. soda water to top

METHOD
add basil to glass / lightly muddle and press basil along sides of glass to release oils / add remaining ingredients / fill ⅔ with crushed or pebble ice / swizzle to mix / add soda water / top with ice / garnish with basil leaves

ABOUT
This is an original cocktail Oven and Shaker in Portland, OR. Their recipe calls for vodka, but gin can easily be used (and how I make them). This is the cocktail you need to be sipping on when the sun is shining; lemon, honey, and basil are the spring and summer trifecta. Cheers y’all!
