Autumn Daiquiri
AUTUMN DAIQUIRI
2 oz. / 60 ml. Mount Gay Eclipse rum
½ oz. / 15 ml. fresh lime juice
½ oz. / 15 ml. pineapple juice
¼ oz. / 7.5 ml. cinnamon syrup
¼ oz. / 7.5 ml. demerara syrup
1 dash Angostura bitters
METHOD
add all ingredients to shaker tin / shake with ice until chilled / fine strain into coupe or Nick and Nora / no garnish

A daiquiri might just be my deathbed cocktail. I came across this fall daiquiri by Joaquín Simó, who made it for Death & Co (@deathandcompany). Simó tried various rums before choosing Mount Gay Eclipse, which adds a distinct apple-like character to the drink. Cheers y’all!
