2 oz. / 60 ml. rye whiskey
¾ oz. / 22.5 ml. sweet vermouth
½ oz. / 15 ml. Cynar
METHOD
add all ingredients to mixing glass / stir with ice until chilled / strain into a coupe or Nick and Nora / garnish with maraschino or brandied cherry

Meet the modern classic created by Audrey Saunders in 2005 when she opened the legendary Pegu Club (NYC; now closed). This was her take on a house Manhattan. The idea of swapping an amaro in for the bitters occurred to Saunders during a dinner at the New York restaurant Raoul's. Saunders preferred Rittenhouse when they created it. Cheers y’all!
