Clarified Piña Colada

CLARIFIED PIÑA COLADA

  • 7 oz. / 210 ml. aged rum

  • 4 oz. / 120 ml. coconut water

  • 1½ oz. / 45 ml. falernum

  • ½ oz. / 15 ml. coconut cream

  • ½ oz. / 15 ml. demerara syrup

  • 2 oz. / 60 ml. pineapple juice

  • 1½ oz. / 45 ml. fresh lime juice

  • 3½ oz. / 105 ml. milk, to clarify

  • nutmeg to garnish

    Serves 4–5 (recipe is easily scalable!)

METHOD
combine all ingredients except milk / stir and pour over milk / let sit for 1 hour (or overnight) until milk curdles / slowly pour mixture into funnel lined with coffee filter or paper towel / first drops will be cloudy, so swap out container when drops are clear / pass through cloudy portion until all is clear / store in sealed bottle / to serve, pour over clear ice / garnish with fresh nutmeg and pineapple frond

To be honest, I love clarifying cocktails. The science behind it is fun. They are shelf-stable. It’s easy to do. You get a nice mouthfeel from it. Clear ice is lovely. Cheers y’all!
