Pedro Martínez

PEDRO MARTÍNEZ

  • 2 oz. / 60 ml. aged rum (Guyana)

  • 1 oz. / 30 ml. sweet vermouth

  • ¼ oz. / 7.5 ml. maraschino liqueur

  • 3 dashes orange bitters

  • 10 drops Angostura bitters

  • 4 drops absinthe

  • lime peel to stir

  • lemon peel oil

METHOD
add all ingredients including lime peel to mixing glass / stir with ice until chilled / strain into a glass over a BFC / express two lemon peels over surface and discard / no garnish

ABOUT
This cocktail is by Michael Shea, owner of one of my favorite Portland bars, Rum Club (@rumclubpdx). It is a twist on the classic Martinez cocktail. Nothing beats having this in the club, as they use a house blend of rums that you can’t replicate. Cheers y’all!
