Piña Carajillo

PIÑA CARAJILLO

  • 1½ oz. / 45 ml. Licor 43

  • ¾ oz. / 22.5 ml. mezcal

  • 2 oz. / 60 ml. espresso

  • ½ oz. / 15 ml. pineapple gum syrup

METHOD
add all ingredients to shaker tin / add ice and shake until chilled / strain into glass over fresh ice / garnish with pineapple fronds

ABOUT
Move over espresso martini, the Carajillo will be your new favorite coffee cocktail. The Carajillo is one of the most popular drinks in Mexico. Sometimes you see it layered, recently you see it shaken (who can say no to that foam?!). This is my take on it where I add smoky mezcal and pineapple syrup (coffee + pineapple = dream combo!).
