Pink Skies

PINK SKIES

  • 2 oz. / 60 ml. gin

  • ½ oz. / 15 ml. dry vermouth

  • ¾ oz. / 22.5 ml. lemon juice

  • ¾ oz. / 22.5 ml. heavy cream

  • ¾ oz. / 22.5 ml. raspberry syrup

  • 1 egg white

  • 4 dashes absinthe

  • soda water to top

  • orange peel oil

METHOD
add all ingredients to shaker tin / whip shake with two ice cubes (until you no longer hear ice) / pour into Collins glass / top with soda water to brim / chill for 3–5 minutes in freezer (or fridge) / poke hole in center with straw and add more soda water (or pour down barspoon) until foam rises over glass / express orange peel oil / no garnish

ABOUT
I’ve had this idea in my head for a while to combine a Clover Club and Ramos Gin Fizz (named after the song by Zach Bryan). It’s creamy, tart, and has a soft fizz. The absinthe isn’t traditional in either, but it steps in where orange flower water usually goes to keep it interesting. Cheers y’all!
