SCOTCH NEG
1 oz. / 30 ml. smoky Scotch
¾ oz. / 22.5 ml. Bénédictine
¾ oz. / 22.5 ml. white vermouth
¼ oz. / 7.5 ml. Amaro Nonino
orange peel oil
applewood smoke
METHOD
add all ingredients to mixing glass / stir with ice until chilled / strain into a coupe or Nick and Nora / express orange peel over surface / smoke with applewood (optional) / garnish with orange twist and maraschino cherry

This one is by fellow professor, Martin Foys, creator of The Gin Pennant (@theginpennant), a private speakeasy-style “bar” in Madison, WI. This Scotch Negroni has layers of complexity from the bitter nonino and herbal Bénédictine. The proportions make this one smoother and more nuanced than the traditional. The applewood smoke, though optional, transports you to a dimly lit, vintage bar where the air is filled with the soft glow of brass fixtures, hushed conversation, and the deep, smoky allure of fine spirits.
