TAI DU MAI (Cognac Mai Tai)
1 oz. / 30 ml. cognac
½ oz. / 15 ml. overproof Jamaican rum
¼ oz. / 7.5 ml. dry curaçao
1 oz. / 30 ml. fresh lime juice
½ oz. / 15 ml. pineapple syrup
¼ oz. / 7.5 ml. orgeat
mint bouquet to garnish
METHOD
add all ingredients to shaker tin / add a small amount of crushed ice and shake until chilled / dirty dump into glass / top with crushed or pebble ice / garnish with mint bouquet after slapping it to express oils
